Very Disappointed in the quality of the steel!
The good: Looks nice, good weight, well balanced. The Bad: After only 2 months of light use, dicing chicken breast and vegetables, the knife got a small chip in the blade. In comparison, my previous knife was a Mercer, that cost less than half of this one. In my over 10 years of using the Mercer, I Never got a single chip! Unfortunately, it's past the 30 day return window, so I am stuck with this poorly tempered knife. Knives Etcetera made it right by sending me a replacement knife.
